What nuance does using なんだ here provide? What would be the difference in meaning if you left out なんだ?
んだ Meaning: to explain something; show emphasis.
好きです is just stating a fact. I like it.
However,
好きなんだ is stating a fact but carries more emphasis as the speaker is explaining his/her feeling or answering the question.

for example “日本語はとても美しい言語と思いますの”
would this make it sound alot more from my personal feelings, and passion for the language?
In general, The particle の can be used at the end of a sentence as an informal alternative to か to indicate a question. の used in this way can follow a plain verb, an い adjective, or either a noun or a な adjective followed by な (i.e. as なの).
の is also commonly used in feminine speech to indicate emphasis, roughly the equivalent of よ.
so, you can say 日本語はとても美しい言語と思いますよ.
