What’s the difference between 大変 and 難し?
I know it’s confusing since both can be translated as “hard.”
I’ll try to use different words to show the difference between them.
大変 – touch, rough, requires much effort or time to deal with something
難しい – difficult, not easy to do or solve something due to lack of ability, skills, experiences or resources.

I know there can be different ways to say the same thing but are all these just “very”?

ー It is easier to understand the difference if you are aware of the actual situation in which they are used, rather than trying to remember it by translation. So it is better to ask when you find a sentence that contains the word, not the word by itself.
・本当に – truly, (the opposite of lying)
※ When someone uses 本当に, they imply they really mean it from the bottom of their heart.
・とても – very, really, extremely (emphasizing)
・なかなか – quite, fairy, (It’s used when something exceeds the expected degree.)
・かなり – considerably, rather (It’s not extreme, but is above the ordinary degree, more than expected.)
この料理は本当に美味しい。
この料理はとても美味しい。
この料理はなかなか美味しい。
この料理はかなり美味しい。

食べてみていい? – Is it okay if I try the food?
※(verb) + みる – try doing some action (to see what it is like)
