What’s the difference between ’でも’ and ’けど’? Like in situation 3 dialogue 4 ‘はい。けど、楽しいですよ’, what if ’でも’ is used instead of ’けど’?

Yes, you can use でも there.
Basically, でも is more appropriate because it is placed at the beginning of a sentence, while けど is used in the middle or at the end of a sentence as a conjunctive particle.

Examples:
あなたの案は素晴らしい。でも私は反対です。- Your idea is great. However, I disagree.
あなたの案は素晴らしいけど、私は反対です。- Your idea is great, but I disagree.

Starting a sentence with けど sounds casual, so it’s acceptable in informal situations.
