In the first conversation, why is the phase 仕事入っちゃって used when it is describing past tense? I thought ‘some work came in’ would be 仕事入っちゃった.

The translation is not accurate. It’s not the past tense.
It’s the present perfect. (something has just happened).
仕事が入った in the dialogue means “something has come up at work.” or “I’ve got something to do at work.”

Pretty sure the answer for question 2 of situation 1 is incorrect. 「2. ツヨシは明日、本当は____だった。」answer listed, 「休み」however, shouldn’t it be 「仕事」? which is not listed, since he has work tomorrow not a day off?

In this situation,

He was going to watch the movie with her because it was his day off, but unexpectedly, work came in.

That is why the answer is
本当は休みだった。

If any questions, please let me know.

I was confused too, which is why I came down to the comments
So you’re saying, the question with the blank filled in, means that it HAD been his day off, before something unexpected came up?

It was supposed to be his day off but something came unexpectedly, so he can not help but cancel or schedule the date.
