When I want to use しよう。to say let’s party in Japanese since it expresses agreement. Would I say “パーティーしよう!”?

パーティーしよう is good.

しようis the causal/plain form of しましょう meaning, “let’s do(it)”. This is the volitional form of the verb する meaning “to do”

A: 週末、うちでパーティしない?
This weekend, want to have a party at my place?
B: うん、いいね!しよう!
Yeah, sounds good! Let’s do it!
B is saying “Let’s do it!” in agreement A.

I have question in terms of wondering what is the story someone is reading or what an event revolves around? What would you say if you wanted to ask someone “What is it about”, “What is the event about” or “what is the story about”. How would I ask someone online or in person by saying these things.

You can say, それってどんなイベント?それはどんなイベントですか?(What is the event about?)
どんな話ですか?何の話ですか?何のことですか?何のこと?( what is it about?)

Why is it 「何して遊ぶの」and not 「何を遊ぶの」?

We don’t say 何を遊ぶ.
When you use 遊ぶ, it’s basically either Xをして遊ぶ or Xで遊ぶ.

Xをして遊ぶ ー play X, play doing X
Example: かくれんぼをして遊ぶ。ー Play hide-and-seek.

Xで遊ぶ ー play with X (tools or objects)
Example: おもちゃで遊ぶ ー Play with toys
