In situation 1 何(なんに)食べたい I understand that 何is read as なん if it precedes words in the た,だ,な,row of the hiragana chart. So shouldn’t the sentence read as なん 食べたい

ー Yes, 何 is read as なん if it’s followed by the sound “d”, “t” or, “n.”
Also, when it’s followed by です and when it’s about numbers (various types)

In the questioned sentence, however, the standard way of saying it is 何(なに)を食べたい?(What would you like to eat?). The 何 is followed by を. And she just omitted the particle.

It’s because を is there. It’s just omitted.
In spoken language in casual situations, the particles are often omitted.
