I am not fully understanding “くらい” in the context of 本ほんくらい読よむかもしれませんけど。

くらい has several meanings, and here, it means “at least.”
The sentence means “I might at least read a book, though.”
He’s saying he won’t do anything particular coming Sunday, but he might at least read a book probably because it’s his habit or it’s something he can do easily.

I see 結構 means “quite, fairly,” or “good”

Could it also mean in context “No thanks” as in 結構です
so I would assume “is good” as in “I’m good” = “No thank you”?

I’ve heard 結構です used in that context before, as in declining an offer or invitation.

If you add もう or いいえ, it means a polite refusal.

もう結構です。 – This is enough. I’m fine.
いいえ、結構です。 – No, thank you.
