This question is not related to this lesson but am still on unsure how to use the の particle as a phrasal noun for example in the basic particle guide the sentence: 料理を作るのは難しい。Would omitting the の particle change the meaning or expression of the sentence in anyway. Thanks in advance 先生。

料理を作る means “cook a dish.”
の makes a verb or a sentence a noun phrase.
料理を作るのは means “cooking a dish.”

私は料理を作る。 – I cook a dish.
料理を作るのは難しい – Cooking a dish is difficult.

私は歩く – I walk
歩くのは楽しい – Walking is fun.

Just curious, lesson 1 says “Naoki is chatting with her friend, Rika.”, but Naoki sounds like a guy to me?

What’s the difference between 食べてない and 食べなかった?

for example,

食べなかった indicates that someone did not eat in the past. It translates to “didn’t eat” or “hadn’t eaten” in English. It’s used to describe a past action of not eating.
e.g 昨日、忙しかったので朝ご飯を食べなかった。 (I didn’t eat breakfast yesterday because I was busy.)
