Hey, i have a question, in [ナオキ:ほんと?俺、全然分からなくて] what is the て form of ない for exactly? i see it a lot where the て form of verbs, helper words and more are used at the end of a sentence with not much explanation as to why

The full sentence should be:
俺、全然分からなくて、できない (or 解けない、or 終わらない).

You can explain a reason in the first part of a sentence by using くて.
And you can omit the latter part when it is so obvious that you don’t have to say.

In Situation #2, Suzuki’s last line would read better as…
“I just have a little more to do.”

後少しで終わります means “I’m almost done.” or “I’ll be done soon.”

As for your sentence “I just have a little more to do.”, we’d say もう少しだけやることがあります.
The phrase is used when you tell others that you won’t finish something soon.

Small typo in intro: “Yamada-san spoke up to his superior” should be “…her superior”.
